Had this for dinner tonight. Is DELISH. Also, healthy, depending on the choices you make!

Ingredients:
6-8 oz boneless/skinless chicken breast; cut into strips or squares
5 small green onions; thinly sliced
1/2 of a medium- or small-sized green pepper; diced
1 small tomato; diced
3/4 or 1 cup fresh pineapple; diced
2 tablespoons red wine vinegar
1 tablespoon cornstarch
2 tablespoon brown sugar or artificial brown sugar (ie, Sugar Twin)
2 tablespoons ketchup
1/2 cup low-sodium chicken broth

1. Spray skillet or wok with cooking spray (ie, Pam). [ I cannot advise you how much oil to use in this, since I do not cook with oil. ] Add onion and green pepper and stir-fry over medium heat until vegetables are crisp-tender. Remove and set aside.

2. Spray skillet/wok with more cooking spray. Add chicken pieces ad stir-fry over medium heat until chicken is no longer pink.

3. Mix vinegar, cornstarch, chicken broth, brown sugar, and ketchup. Add to skillet/wok. Cook, stirring constantly until sauce thickens. [ This does not take long! ]

4. Return onion and green pepper to skillet/wok. Stir in pineapple chunks. Cover and cook for 2 minutes or until heated through. Stir in tomato. Stir for 1-2 minutes.

Oh, sugar replacements! Like, Sweet&Low, or Splenda. Made from sugar, taste like sugar, none of the Bad Things For You of sugar. So, yeah, it's a brown-sugar-tasting sweetner.

I'm on a really uber-strict diet, so of course I go with all the proper substitutions. 30 pounds, 40 more to go. *BIG sigh*
